¾ lb. cooked chicken meat
¼ streaky bacon reashers, chopped
1 lb. onions, chopped
½ lb. peas
½ lb. carrots
2 oz. butter
1 tsp. chopped parsley
1 oz. flour
½ pt. milk
1½ lbs. mashed potato
salt and pepper
Cook peas and thinly sliced carrots in salted, boiling water for 10 minutes. Strain. Fry onion and bacon in 1 oz. butter until cooked. Stir in flour slowly. Add milk and bring to boil. Remove from heat. Stir in chicken meat, parsley and vegetables. Place in an ovenproof dish. Cover with potato and even off
with a fork. Dot with remaining butter. Heat through in a moderate to hot oven
until golden.
