2 oz. butter
4 large tomatoes
1 tsp. chopped fresh thyme
2 tbsps. water or fish stock
salt and pepper
Place fillets in an ovenproof dish with water. Season and sprinkle with thyme.
Slice tomatoes and place over fish. Dot with butter and cook in a moderate oven for 45 minutes to one hour.
