4 trout
4 oz. breadcrumbs
2 oz. chopped onion
1 tbsp. chopped parsley
¼ tsp. grated lemon rind
juice of ½ lemon
1 egg yolk
salt and pepper
a little butter
Fry onion gently in butter until transparent. Mix with all stuffing ingredients.
Season trout and fill with stuffing mixture. Place in an ovenproof dish and bake for 1 hour at 200 ºC or Gas Mark 6. Serve with cooking juices poured over and a sprinkling of parsley.
