2 lbs. round steak
2 cups of breadcrumbs
½ finely chopped onion
1 tsp. chopped parsley
1 tsp. chopped thyme
¼ lb. finely chopped mushrooms
salt and pepper
1 pt. stock
Trim steak and flatten with a rolling pin. When quite thin, fill with stuffing, made by mixing all the other ingredients, except stock. Fold over and secure
with skewers. Sear steak on all sides in hot fat. Place in an ovenproof dish,
Add stock and cook for 2-2 ½ hours in a moderate oven or 160 ºC, Gas Mark 3.
